Course: Advanced Dutch Oven Cooking
(PEAC 1182C)

COURSE DESCRIPTION

 

Expands upon the basics taught in the beginning course. Includes large group meal planning, dutch oven catering, garnishing and presentation of meals, gourmet meal preparation, and competitive cooking.

 

 

TEXT

 

No text will be required for this course; however, the Outdoor Program office has several Dutch oven cookbooks which may be referred to for recipe ideas. A cookbook will be published at the end of the class from the recipes compiled during the class.

 

 

TARGETED STANDARDS


The Sports Science and Physical Education Department’s Outdoor Education curriculum at Idaho State is based on a foundation of five nationally recognized standards.  The following standard applies to this course:

Standard #5  Outdoor Education Experiential Skills and Field Experience Outdoor educators understand the techniques, equipment and safety procedures associated with a variety of outdoor skills; have taken ample opportunity to learn, practice and refine outdoor skills; and have gained practical experience in leading outdoor activities and/or teaching outdoor skills.

COURSE OBJECTIVES


Objective 1 (Academic Objective):  To research and formulate multi-course meals for large groups.

Objective 1 Learning Outcomes - By the end of the course, students will:

 

1a. Re-work basic recipes for use with groups
1b. Prepare lists of ingredients and calculate proper amounts for large group cooking

 

Objective 2 (Motor Skills Objective):  To prepare and cater meals for large groups.

Objective 2 Learning Outcomes – By the end of the course, students will:


2a.  Prepare at least one multi-course meal for a large group
2b.  Cook in several dutch ovens at the same time, completing each separate course at properly spaced intervals.

Objective 3 (Academic Objective):  To gain skills and knowledge in the garnishing and presentation of meals

Objective 3 Learning Outcomes – By the end of the course, students will:


3a.  Have an understanding of the use of colors to complement and offset dutch oven dishes.
3b.  Know types of garnish which can be used to improve the presentation of dishes

Objective 4 (Motor Skills):  To organize, prepare and participate in Dutch oven cooking competition.

Objective 4 Learning Outcomes – By the end of the course, students will:


4a. Have an understanding how Dutch oven competitions are organized and scored. 
4b.  Prepare at least two different dishes for a Dutch oven competition.


GRADING


Grading in this class is based on a point system.  The total number of points is 100 and consists of two components:
